Wow, well researched this isn’t. Hyrule Warriors with the DLC had a level cap of 255 as well, and the later versions for 3DS and Switch had max Lv 255 out of the box.
Max level in age of Calamity is 100. This article seems to be copied off some article about HW Definitive Edition.
